Huyen Le is a Vietnamese native who loves traveling to different parts of the world. Luckily, her education allows her to fulfill this passion. Spending four years in Japan, she completed a B.A. in Tourism and Hospitality Management at Ritsumeikan Asia Pacific University. She then went on to earn a B.S. in Nutrition and Dietetics from the University of New Mexico, before joining Rutgers’ Nutritional Sciences Graduate Program as a Ph.D. student. Her research focuses on the metabolism of glutamine in adipose tissue. When not in the lab, she enjoys exploring the Garden State with her dog Amani, and training for Olympic lifting.
