Bo YuanBo graduated with his Ph.D degree in Food Science in 2020. He received his bachelor’s degree in China in food science and engineering. His work focused on the nutrients and anti-nutrients of African indigenous Solanum vegetables, by means of LC-MS, GC-MS, column chromatography, NMR, and different bioactivity and toxicity assays. His study was part of a joint effort to promote the cultivation and consumption of African indigenous vegetables in Africa, improve health and nutrition, and boost local and regional economy.
