“The Shades of Amaranth”

Storytelling students Jayden G., Jayna C., and Astanah L. created this story about the color variety in different cultivars of amaranth, and how this relates to nutrient content, as well as the methodologies surrounding the detection of these nutrients in the lab. The research covered in this story is led by PhD student Tori Rosen and Dr. Jim Simon from the Rutgers Department of Plant Biology.
