The Summer 2025 4-H Ag Tech high school student cohort focused on the Rutgers Plant Biology Department’s research on Amaranthus led by PhD student Tori Rosen and Dr. Jim Simon. Topics include research on how light impacts the plant, the different colors that can be expressed by the plant, the culture surrounding the historical use of the plant, as well as the technologies being used to study amaranth. This program was supported by USDA NIFA Grant 2023-67037-41123.

Storytelling students Genesis L., Antonio R., and Emily O. created “Amaranth and Light,” a science story about how different types of light impact amaranth growth.

Storytelling students Jayden G., Jayna C., and Astanah L. created “The Shades of Amaranth,” a science about the color variety in different cultivars of amaranth, and how this relates to nutrient content, as well as the methodologies surrounding the detection of these nutrients in the lab.
